International Food and Carrot Cake

 Every other Wednesday we have International Mat (International Food). This is a required thing for all NLC students, but the Norwegians can choose if they want to help or not. The NLC students group into our respective countries and make typical food from home for the whole school. So far we've had Mexican, German, and USA food. Us Americans gathered in the kitchen around 5 and began cooking. We made baked mac and cheese, caesar salad, and hot dogs. Kind of a weird combination, but it is comfort food for us. Making food for 100 people is pretty difficult and time-consuming. It becomes even more so when we need to figure out how to make vegetarian, gluten-free, dairy-free, and vegan options as well. We had a couple of failed attempts with the dairy substatutes, but it all worked out in the end. Here are some pictures of the process.

Somehow I don't have any pictures of the finished product. But I know there are some of the school's Facebook or Instagram so go check there. We are gonna move quickly through the events of the next few days.

This is a bad-quality photo of the gingerbread I bought for myself. The funny thing is that every single gingerbread man has a missing leg. Here are the remaining legs and heads at the end of the bucket.

I found this funky sweater in our favorite antique store. I haven't bought it yet though. 

I'm suddenly feeling really tired. I have kitchen duty this week so I am always busy. Ta-ta for now!
